2 tbsp olive oil
3 tbsp minced garlic
1 tbsp crushed red pepper flakes
1 tbsp italian seasoning
6 boneless skinless chicken breasts (roughly 1.5 lb)
1 32 oz. jar marinara (I used Kirkland; Costco's brand)
1/4 cup chopped basil
8 oz mozzarella, shredded
4 oz parmesan, shredded
1 bag garlic croutons OR 8 slices gluten-free day-old white bread, brushed with melted garlic butter and baked at 350 for 15-20 minutes (until it's pretty thoroughly toasted) then cut into bite-sized cubes.
1- Preheat oven to 350.
2- If you're making this gluten-free you have to make your own croutons put them in the oven first for roughly 15 minutes and then do your prep below.
3- Drizzle the olive oil in the bottom of your baking dish and add the garlic, italian seasoning, and red pepper flakes.
4- Place the chicken breasts in the dish, and cover evenly with the marinara sauce.
5- Add the basil, then top with half of each kind of cheese.
6- Layer evenly with croutons and the rest of the cheese and bake for 35 - 40 minutes.
